A recipe for wacky cake with cinnamon icing. My mother made this for years but her recipe was lost in a flood.

Crazy Cake (or Whacky, whatever)





3 cups flour


2 cups sugar


1/2 cup cocoa


2 tsp. soda


1 tsp salt





Measure into mixing bowl. Make a well in centre. Add 3/4 cup oil, 2 tsp vinegar, 2 tsp. vanilla and 2 cups water. Mix well, Pour into greased 9x13 pan and bake at 350 for 35 minutes.

WACKY CAKE





1 1/2 cup flour


1 cup sugar


1 teaspoon baking soda


1/2 teaspoon salt


3 tablespoon cocoa


1/3 cup melted shortening or oil


1 tablespoon vinegar


1 teaspoon vanilla


1 cup cold water





Preheat oven to 350掳F.


Sift dry ingredients into a 9 x 9 inch pan. Mix well. Make 3 holes, one for vinegar, oil and vanilla. Pour water over all. Mix well with fork. Do not beat.





Bake at 350掳F for 30 minutes. Leave in pan and frost while still warm.








WACKY CAKE TOPPING:





1/2 cup sugar


1/2 cup milk


1/4 stick butter


1 1/2 tablespoon flour


1/2 cup coconut


1/2 cup nuts


1/2 teaspoon vanilla





I'M SURE YOU COULD ADD A TSP OF CINNAMON TO THIS!
Wacky Cake





1 1/2 c Unbleached All-Purpose Flour


3 tb Cocoa


1/2 ts Salt


1 ts Vinegar


1 c Cold Water


1 c Sugar


1 ts Baking Soda


1 ts Vanilla


5 tb Vegetable Oil





Mix flour, sugar, cocoa, soda and salt. Make three wells in the flour


mixture. In one put vanilla; in another the vinegar, and in the third the


oil. Pour 1 c cold water over all and stir. No need to beat. Pour into


8 x 8-inch pan. Bake at 350 degrees F oven until it springs back.








Honey Icing





1 c Sugar


1/2 c Honey


1 1/4 tsp. Cinnamon


1/8 ts Salt


1 c Diced marshmallows


1/4 c Water


1 Egg white, stiffly beaten





Combine sugar, honey, water, and salt. Boil to soft ball stage (236 F).


Add marshmallows. Pour slowly, beating constantly, onto egg white. Beat


until thick and creamy.








THIS IS THE RECIPE MY MOM ALWAYS USED
The recipes shown are the same as my MIL made for my husband's birthday cake every year. She used a butter cream cheese frosting which tasted so good because the cake is not a typical sweet cake. Enjoy
