As for an egg substitute, try Cold Milled Flax. Use one tablespoon of flax with three tablespoons of water for one egg. We haven't used it in a cake, but it makes awesome waffles!





It is supposed to be a replacement for butter and oils, too.





As for chocolate, always use the cocoa powder with blue agave or honey instead of prepared chocolate which seems to always have some sort of milk product.
