Cornbread cake from Jiffy corn muffin mix recipes, please?

Ok. So the idea is to make my boyfriend a sweet (preferably spiced) cornbread cake topped with avocado frosting (save the ';eww'; for someone else - we have broad palettes). The frosting I have down, but the cake part is confusing me - I can't seem to find one solid reciped for a cornbread cake using mix!


I don't think my baking is secure enough for me to start from scratch, and I know Jiffy is a cheap-but-reputable brand.


The few recipes online that I found online were all over the place. Some called for Jiffy and creamed corn (I like that idea! sounds moist!), some for 1 jiffy and 1 cake mix, some for 1/2 jiffy, 1/2 cake, some with sugar, some without.....???


Also, they all say to ';grease one pan,'; but I want to make two small layers like you do with other birthday cakes!





So, does anyone have a good recipe for a sweet, spiced (cinnamon, etc), MOIST, double layer corn cake from box mix???





I would be FOREVER indebted, because I'm very frustrated as of now!

i don't have anything for sweet but ,


since you have the avocado frosting why not mix some finely chopped -


onion


jalapeno


cilantro


and some tomato ( fresh but dried of excess moisture )


mix with batter and divide in two pie pans ,bake per instructions


then do the icing .


i'm going to try this ,myself good twist to the cornbread scene..

Baking a cake from scratch is easy, trust me! If you follow the recipe then you'll have no problems, and this way let's you season and spice the cake however you like!





If you want 2 round pans instead of a large rectangle cake, you dont need a different recipe. Just grease the 2 pans instead and bake it for a little less time. When making cakes, you can tell when it's done when a toothpick inserted into the center comes out clean, and not with crumbs or batter on it.





So look on the internet for a cake recipe that sounds good to you and have at it!

By the way, avocado and cornbread sounds AMAZING. Don't let anyone tell you otherwise. I think the avocado is the most underrated fruit ever.
Micro Cake From ';Jiffy'; Mix





1 pk Jiffy cake mix


2 x Eggs


6 tb Instant pudding mix


1/4 c Margarine (softened)


1/2 c Water


1 ts Vanilla (optional)





Instructions:


Beat 3 minutes by mixer or 300 strokes by hand. Pour into a lightly


greased 8'; round glass cake pan or micro cake pan. Bake for 8 - 9 minutes


or until a toothpick inserted comes out dry. This on ';Roast'; or ';Medium-


High'; .. Cool 5 minutes before turning onto serving dish. Cool completely


before frosting.

Use the Jiffy corn mix, PLUS a Jiffy yellow cake mix and use all the ingredients listed on both packages. You'll have to somewhat adjust the baking time though, since they'll be different on the 2 boxes. But bake at the cake mix temperature, and start with the lowest time stated on the boxes. Then, just watch it until it browns on top and is firm. If you want, you can also add a small can of corn or creamed corn. Marie Callender's restaurants makes THEIRS using corn bread and cake mix. This will be a light, cakey, sweeter cornbread....
Go to nytimes.com for the recipe and just add 1/2 tsp each of cinnamon, nutmeg.
