Recipe for coffee cake?

Here's my recipe for crumb cake, which is really the same thing.





MARK鈥橲 CRUMB CAKE





For the cake:





4 oz. butter


1 cup sugar


2 eggs + 1 egg yolk


戮 cup milk


1 录 teaspoons vanilla extract


2 cups flour


2 teaspoons baking powder


Pinch of salt





For the topping:





4 oz. butter


1 cup brown sugar


2 cups flour


2 teaspoons cinnamon


Powdered sugar as needed





Preheat oven to 350 degrees. Cream the butter on medium speed with an electric mixer for three minutes. Gradually add the cup of sugar and mix for four more minutes, scraping down the sides of the bowl as needed. Add the eggs and egg yolk one at a time, beating for 30 seconds between each one and then one more minute after the addition of the last one. As with the addition of the sugar, scrape down the bowl as needed to ensure complete incorporation of the ingredients. Combine the milk and vanilla extract and gradually add to the butter mixture. In another bowl mix the flour, baking powder and salt. Gradually mix into the butter mixture scraping the sides as necessary.





Pour the batter into a greased 9 X 13 pan. For the crumb topping, mix the butter, brown sugar, flour and cinnamon with a pastry cutter or fork until coarse crumbs are achieved. Sprinkle the topping over the batter in the pan. Bake for 30 minutes or until set. Allow the cake to cool somewhat and then sprinkle with the powdered sugar.Recipe for coffee cake?

Jiffy Coffee cake


1 Jiffy cake mix


3 cans of favorite fruit and 1/2 liquids


1 stick of butter or 1/2c margarine melted


1c coconut


1/2 c pecans,chopped





Pour fruit and liquid in 8x8-inc cake pan sprayed with cooking oil.Spread mix on top.Sprinkle nuts and coconut on top.Drizzle with butter or margarine,Bake 30 minutes at 350,serve warm or chilled
Cinnamon Coffee Cake:





This is so rich, moist and delicious. Fills the house with the wonderful aroma of cinnamon.

16-20 servings





1 cup butter or margarine, softened


2 3/4 cups sugar, divided


2 teaspoons vanilla


4 eggs


3 cups all-purpose flour


2 teaspoons baking powder


1 teaspoon baking soda


1 teaspoon salt


16 ounces sour cream (2 cups)


2 tablespoons ground cinnamon


1/2 cup chopped walnuts





1. In a large bowl, cream the butter and 2 c. sugar until fluffy.


2. Add the vanilla; add the eggs, one at a time, beating well after each addition.


3. Combine the flour, baking powder, baking soda, and salt; add alternately with sour cream, beating just enough after each addition to keep batter smooth.


4. Spoon one-third of the batter into a greased 10 inch tube pan.


5. Combine the cinnamon, nuts, and remaining sugar; sprinkle one-third over batter in pan.


6. Repeat layers two more times.


7. Bake at 350 degrees for 70 minutes or until cake tests done.


8. Cool for 10 minutes; remove from pan to a wire rack to cool completely.
This recipe has been in our family for 50 years and originates from Hungary.





HUNGARIAN COFFEE CAKE (ARANY GALUSKA)





1 cup sour cream 1/2 cup sugar 1 tsp. salt


2 cakes yeast 3 eggs 1/2 cup soft butter


4 1/2 cup flour 1/2 cup melted butter


1 cup chopped walnuts 3/4 tsp cinnamon


1 cup sugar





Mix sour cream, sugar, salt, and yeast. Stir until yeast dissolves. Add eggs, softened butter, and half the flour. Mix well and add rest of flour. Turn dough out on floured board and knead until smooth for about 10 minutes or so. Place in greased bowl. Cover and let rise in warm place until double in bulk for about 1 1/2 to 2 hours. Punch down. Turn over and let rise again for 45 minutes. After second rising, form into walnut-sized balls. Dip in melted butter. Roll in sugar and walnut-cinnamon mixture. Place in layers in 10-inch greased tube pan. Let rise for 45 minutes. Bake 40-50 minutes at 375 degrees.





This is a bit of work, but soooooo worth it. If you have kids, they'll love serving themselves, spooning the walnut balls out of the pan.
Apple Crumb Coffee Cake





Ingredients for the Cake





1 egg yolk


2 cups flour


1/2 teaspoon baking powder


1/2 cup soft butter


5 tablespoons milk





In bowl, cream the butter, sugar and egg. Add the dry ingredients and add milk. Mix well. Grease a square baking pan.


Spread this dough to cover the bottom of the pan.

Ingredients for the Apple Filling





8 peeled and sliced apples


3/4 cups sugar


1 teaspoon cinnamon





Mix all together in a bowl. Now, spread this mixture over


the dough in the pan.

Ingredients for Crumb Topping


1/2 cup soft butter


1 cup flour


1/4 cup sugar


2 teaspoons cinnamon





Mix the crumb topping ingredients, and


spread over the apples in the pan. Bake at 350 degrees for 1 hour. Sprinkle with confectioners sugar when cooled.

BLUEBERRY COFFEE CAKE





CAKE MIXTURE:





3/4 c. sugar


1/4 c. soft shortening


1 egg


1/2 c. milk


2 c. sifted flour


2 tsp. baking powder


1/2 tsp. salt


2 c. blueberries (drained if canned)





CRUMB MIXTURE:





1/2 c. sugar


1/3 c. sifted flour


1/2 tsp. cinnamon


1/4 c. butter





Mix together sugar, shortening and eggs. Stir in milk. Sift together flour, baking powder and salt. Add blueberries last. Spread in baking pan 9x9. Mix together crumb mixture, then sprinkle on top of blueberry cake in pan. Bake at 375 degrees for 45 to 50 minutes.
Use the Bisquick recipe for Velvet Crumb cake, except for the topping.





Butter, brown sugar, bisquick (1/3 cup each), vanilla and cinnamon, mash together, and sprinkle on top (let some big bits fall, they'll sink into the batter, then put little bits all over the top).





Bake as directed.





Powedered sugar and a little warm water over the top after baking.

CRUMB TOP COFFEE CAKE





1 stick whipped butter


1 1/2 cups flour


1 cup packed brown sugar


1 1/2 teaspoons baking powder


1 teaspoon cinnamon


1/2 teaspoon salt


1 egg, beaten


1/2 cup milk





Combine butter, flour, sugar, baking powder, cinnamon, and salt and mix until crumbly. Reserve 1/2 cup for topping. To the remaining mixture, add the combined eggs and milk. Mix well. Pour into a greased and floured 8-inch square pan. Sprinkle with the reserved crumbs. Bake in a moderate oven, 375 F, 30 to 35 minutes.
