PINEAPPLE UPSIDE DOWN CAKE





1/4 c. butter


1/2 c. packed brown sugar


1 c. cake flour


1/2 c. sugar


1 tsp. baking powder


1/4 tsp. salt


1/4 c. butter, softened


1/2 c. milk


1 egg


1/2 tsp. vanilla


1 can pineapple slices in syrup


maraschino cherries (as many as pineapple slices used)





Use an 8'; square or round pan. Drain can of pineapple, saving the syrup.


Place butter in 8'; pan, melt in the oven while preheating to 375掳F.





Sprinkle brown sugar over melted butter. Arrange whole pineapple slices and cherries (with cherries in centers of pineapple slices) over the brown sugar in pan. Cut some of the remaining pineapple slices into half circles, then line the sides of the pan with them (standing up).





In a bowl, combine cake flour, sugar, baking powder, salt, softened butter, milk, egg, vanilla and 2 tablespoons of the pineapple syrup.





Pour batter into the pan being careful not to disturb the pineapples and cherries.





Bake at 375掳F for 30 to 35 minutes or until cake is golden and has pulled away from the edges slightly.





Remove from oven and allow to stand for a few minutes to set and then turn it upside down onto a serving dish. Serve while still warm.

Pineapple Upside-Down Cake


Pan Preparation:


1/3 cup butter


1/2 cup brown sugar


Pineapple, sliced (canned)


Maraschino cherries


Pecan halves


1/2 teaspoon vanilla extract





Cake Batter:


2 eggs


2/3 cup granulated sugar


6 tablespoons pineapple juice from fruit


1 cup sifted Gold Medal flour or Softasilk


1/3 teaspoon baking powder


1/4 teaspoon salt





Prepare the pan: melt butter in heavy cast iron skillet or baking dish. Sprinkle brown sugar evenly over butter. Arrange drained slices of pineapple over butter-sugar coating, and garnish well with maraschino cherries and pecan halves in the spaces.





Cake Batter: Beat eggs until thick and lemon-colored (5 minutes). Gradually beat in sugar. Add pineapple juice and vanilla extract.





Sift together flour, baking powder, and salt and beat into mixture all at once. Pour batter over fruit and nuts. Bake at 350 degrees F for 45 minutes or until wooden pick thrust into center of cake comes out clean. Immediately turn upside-down on serving plate. Do not remove pan for a few minutes; brown sugar mixture will run down over cake instead of clinging to pan.





Serve warm, plain, or with whipped cream.

7 slices canned pineapple, drained....1/4 t. salt





7 maraschino cherries........................2/3 C. milk





7 pecan halves.................................1 t. vanilla





1-1/2 C. flour..................................1 egg, lightly beaten





1) Position rack in center of oven, and preheat to 350掳. Melt 4 T. butter in the oven in a 9'; round cake pan; spread over bottom %26amp; sprinkle evenly with brown sugar. place 1 pineapple slice in center of pan; arrange remaining 6 slices in a circle around center slice. Insert 1 maraschino cherry %26amp; 1 pecan half in the center of each pineapple ring.





2) In a medium size bowl, whisk or stir together flour, sugar, baking powder %26amp; salt. Cut remaining 4 T. butter into pea-sized pieces, add to dry ingredients along with milk, vanilla %26amp; egg, and beat till smooth. Pour into prepared pan, spreading evenly.





3) Bake 30 to 35 minutes, or until cake tester inserted in center comes out clean. Remove pan to wire rack; cool 5 minutes. Loosen cake from side of pan with a knife %26amp; invert onto a serving plate. Serve hot or warm. Yield: one 9'; round cake
























It's not exactly Pineapple upside down cake but better and more moist.





You take regular white cake mix and make per instructions. Except you add a can of crushed pineapple and substitue the water for the juice in the can. If it doesn't quite meet the measurments add water to it. Bake as directed.

ANGEL LUSH WITH PINEAPPLE!


1 20 oz can pineapple


1 pk vanilla jello instant pudding


1 cup thawed cool whipp


1 prepared angel food cake


any kind of berries to put on top or on side for decoration





mix pineapple and pudding in bowl, gently stir in whipped topping,


cut cake horizontaly in to thirds


spread 1/3 of pudding mixture on bottom layer of cake, add second layer, repeat layering ending with pudding


refrigerate at least an hour and garnish with ur favorite kinds of berries (blueberry and strawberry is good)
