Does anyone have a simple codfish cake recipe?

Fish Cakes.


2C. Cooked fish. (flaked)


1C. Potatoes. (mashed)


1. Egg. (whisked)


1/8. Pepper.


1. Onion. (diced)


Combine and mash all ingredients together in a mixing bowl.


Salt to taste.


Shape into cakes and fry slowly in small amount of hot fat.


Good served with tomato or cheese sauce.

It's a spanish (puerto rican) thing I think! We call them Bacalawitos! So yummy! Cod fish in spanish is called Bacalaw





1.Boil the cod fish so it's not so salty!





2. Large bowl add flour the cod fish, cummin, and amarindo which is a spice that adds color to food. Not food coloring! lol Its a red spice and turns the cakes like an orange color!





3. Add salt if needed because sometimes the flour can over power the taste!





4. Make sure that you put the cod fish in bowl first and add the flower and water! You want the texture to be like a thick pancake mix!





5. Frying pan add oil make sure the oil is hot before you begin to fry!





6. Spoon some in the pan they should be the size of an english muffin!





They taste great! Sorry I don't have exact measurement for you but I never measure and they come out great!





It won't hurt for you to try it just take a small amount and make one to see if you enjoy!

Cod Fish Cakes Recipe





1 lb of cod fillets


2 medium-sized russet potatoes


1 cup bread crumbs


1/4 cup chopped fresh parsley


2 Tbsp freshly grated Parmesan cheese


2 garlic cloves, finely chopped


1 teaspoon salt


1/2 teaspoon pepper


2 eggs, lightly beaten


Grapeseed oil, or other high smoke point oil such as canola oil, for frying





Boil and mash the potatoes, set them aside.





Boil the codfish until it flakes easily. Drain and flake the fish with a fork. Be sure to remove all bones.





Mix the flaked fish, the potatoes and the rest of the ingredients together well by hand. If the mixture is too crumbly, add another egg. If too sticky, add some more bread crumbs.





Form the mixture into cakes and fry them on medium high heat in a skillet coated with oil.






Ingredients


1/2 pound salt cod


1 small onion, thinly sliced


1 bay leaf


4 peppercorns


2 cups water


2 to 3 cups boiled potatoes


Seasonings (possible suggestions: onion, parsley, black pepper, or other)


2 eggs


Salt


Butter or bacon drippings


2 cups cornmeal


Directions


Soak the salt cod in cold water. Salt cod needs a long soaking to remove the preserving salt, so start at least 1 day in advance. First, wash off excess salt under cold, running water. Place fish in a bowl, or crock, of cold water and refrigerate, changing the water several times. Soak until the fish feels soft and almost fresh, this will take a good 24 hours.





Poach the salt cod. In a 2-quart pan, add onion, bay leaf, peppercorns, and water and bring to a simmer. After 5 minutes, add the drained soaked codfish and enough water to cover the fish. Bring to a simmer. When it comes to a simmer, cover immediately, and remove pan from heat (salt cod toughens if simmered more than a few seconds). Let stand for 10 minutes or until you are ready to use it.





Drain the fish and flake it into a bowl. In a separate bowl, mash the potatoes. Using your hands or a wooden fork, mix the mashed potatoes in with flaked cod. The portions are up to you, more potato than fish is usually the norm. Suggested seasonings to be added at this point are chopped onion, chopped parsley, pepper, etc. In a cup, beat eggs with a pinch of salt. Beat 3/4 of eggs into the fish and potato mixture. Add more egg by drops if mixture is very stiff. Add a little cornmeal if the mixture is too wet. Let cool 20 minutes for easy forming.





In a frying pan, heat about 1/2-inch of butter or bacon grease. Shape cod mixture into small patties, being sure to flatten out the centers. Just before placing in the frying pan, coat patties with cornmeal. Fry 2 to 3 minutes on each side until browned. Remove to a tray lined with paper towels. Keep warm in 200 degree F oven while frying the remaining.

Now, if you want something like crabcakes, or salmon cakes that's easy. I use canned, so no cooking of fish is necessary.





First, saute onions, green peppers and garlic in butter. (All diced small) -put into a large bowl. Add some flavored mustard, worchestershire sauce and hot sauce and an egg or two. Then, cook your fish in the butter remaining in the pan. Flake this fish and add just enough bread crumbs to make patties or balls. Deep fry either in a fryer or fry pan half filled with oil. Top with fresh grated parmesan cheese and serve hot.
