Best vegan sponge/butterfly cake recipe?

I'm vegan and want to make a traditional type cake with my 5 year old nephew... Obviously I will be doing most of it, he'll just be mixing and icing but any ideas as to the best?Best vegan sponge/butterfly cake recipe?
I have no idea if this is any good, but a few blogs and forums seem to love the book called 'Vegan Cupcakes Take over the World' available on Amazon. I found one of their recipes online, and you could just omit some of the ingredients you'd rather not have, cos this isn't a plain recipe.Best vegan sponge/butterfly cake recipe?
Ingredients


basic sponge cake mix


margarine


sweetener


food coloring





Make up the casic sponge cake and instead of putting it in one large tin put it into individual cake spaces in a cake tin to make about 12 small cakes.





Cook for 20 minutes at gas mark 5.





Remove from the oven and leave to cool.





Meanwhile make the cream by using as much margarine as you want to have for cream. Mix it well with a fork and add a teaspoon full of artificial sweetner or sugar. Add a few drops of food colouring to make the cream coloured (I used pink). Mix well till all the ingredients are blended.





Once cool slice a thin part off the top of the cake and cut it in half. The cover the top with the cream and push in the two halves to look like butterfly wings.
to make a cake I swear you need to use eggs and butter or milk and butter...
